Apple Pie
Bake at 425 degrees for 40-50 min.
7 Pippin apples, peeled, cored, cut into 8 wedges and then sliced thinly1/2-3/4 cup of sugar
3 TBSP flour
1/2-3/4 tsp cinnamon and/or nutmeg
salt
Butter
Lemon juice
Peel, core and cut up apples into wedges then thinly slice into a large bowl. Drizzle with a little lemon juice to prevent browning and toss. Add sugar, flour, salt and spices. Toss again. Turn into an unbaked pie crust. Dot with butter. Put crust on top. You can brush top with beaten egg. I like to brush top with water and sprinkle on cinnamonsugar. Cover rim with tin foil, remove for last 10-15 min. Back at 425 degrees for 40-50 min.
Flaky Pie Crust
Makes 2 double or 4 single
3 cups all-purpose flour, sifted1 tsp salt
1 1/4 cup shortening 1 egg, well beaten
1 TBSP vinegar
4 TBSP water
Sift flour and salt into bowl, add shortening and mix with pastry blender. In other bowl combine egg, vinegar, water and drizzle over flour. Mix lightly until moist and holds together. Divide into 4 pieces. For single shells bake at 425 degrees for 12 min. Can freeze after baking.
Optional topping instead of crust topping: Streusel Topping:3/4 cup flour1/2 cup brown sugar
1/2 tsp cinnamon
1/2 cup butter
optional: 1/4 cup coconut
Combine until Crumbly and cover pie. Bake as above.
