Dutch White Ginger Cookies
1 cup soft margarine (or butter)
1 cup powdered sugar
1 tsp ginger
3/4 tsp baking soda
1/4 tsp salt
1 TBSP vinegar
2 1/4 cups flour
On low speed cream butter and sugar. Sift together ginger, baking soda, salt and flour. Add flour slowly to butter mixture. Add vinegar. Refrigerate dough. Roll out and cut out shapes with cookie cutters. Place on ungreased baking sheet and bake at 400 degrees for 6-8 min. Frost and decorate.
Frosting:
2 cups powdered sugar
1/2 tsp vanilla
2 TBSP cream
Mix and frost cookies. Icing may be dyed with food coloring. Or leave white and use colored sugar or jimmies.
