Shrimp in Garlic Butter
2 lbs. large raw shrimp, peeled and deveined
2/3 cup butter
1 1/2 tsps. finely minced shallots (or chives)
2 large cloves of garlic, minced (or finely chopped)
2 Tbsp parsley
1/2 tsp salt
Several grinds of fresh pepper
Wash and dry shrimp. Combine remaining ingredients in a small saucepan; heat slowly until butter is melted. Place shrimp in butter mixture and turn to coat well. Let stand for 15 min. or longer.
Thread shrimp on skewers or place in a fine wire grill basket. Cook over medium coals 8 to 10 minutes, turning and basting often with garlic butter sauce. Heat any remaining sauce and serve with shrimp. Serve over rice.
