Mary's Split Pea Soup
1 TBSP olive oil
1 carrot, finely chopped
1 celery, finely chopped
1/2 small onion, finely chopped (equivalent to celery and carrot)
1/2 tsp minced garlic
1/4 - 1/2 tsp paprika
3 cups chicken stock or water
1 cup split peas
1/8 tsp liquid smoke
pepper
sea salt
Finely chop one carrot and one celery stock. Finely chop a like amount of onion. (The size of your onion may vary). Pour olive oil into a large stock pot to cover bottom. Add onion and carmelize. Add carrot, celery and garlic and sprinkle with pepper and paprika and sauté. Add stock or water and sprinkle with sea salt. Add peas, stir and cover. Simmer for 1 1/2 to 2 hours until peas are tender. Check seasonings and adjust to taste.
Pour soup into blender and whirl until smooth.
Add a few drops of liquid smoke to taste.
Serve or save for later. Freezes well
